Easy Healthy Sweet Potato Cottage Pie
A lighter twist on the classic cottage pie: savory lean mince (or lentils) topped with a creamy sweet potato mash for extra vitamins, fiber and a naturally sweet finish. Prep 15 mins • Cook 35 mins • Total 50 mins.

Ingredients
- 1.2 lb (550 g) sweet potatoes, peeled and chopped
- 1–2 tbsp olive oil
- 1 lb (450 g) lean minced beef or turkey (or 1½ cups cooked brown lentils for vegetarian)
- 1 onion, finely chopped
- 2 carrots, diced (plus extra grated for sweetness if liked)
- 2 celery sticks, diced
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 cup (240 ml) beef or vegetable stock
- 1 tbsp Worcestershire sauce or tamari
- 1 tsp chopped fresh thyme (or ½ tsp dried) and ½ tsp chopped rosemary
- Splash of milk or 3 tbsp Greek yogurt for the mash
- Salt and black pepper to taste

Instructions
- Boil and mash: Place sweet potatoes in salted water and boil until very tender (about 12–15 minutes). Drain, then mash with a splash of milk or Greek yogurt, season with salt and pepper and set aside.
- Sauté aromatics & brown mince: Heat olive oil in a large frying pan. Sauté onion, carrot and celery until softened. Add garlic, then add the minced beef/turkey (or cooked lentils) and brown. Stir in tomato paste, thyme and rosemary.
- Simmer filling: Pour in stock and Worcestershire or tamari. Simmer gently until the filling thickens (about 8–10 minutes). Adjust seasoning—add a splash of soy or balsamic for extra depth if needed.
- Assemble & bake: Transfer the filling to a baking dish or cast-iron skillet. Spoon the sweet potato mash over the top, score lightly with a fork or spatula, brush with a little olive oil or milk. Bake at 400°F (200°C) for 15–20 minutes until the top is golden. For a crisp finish, broil briefly watching closely.
- Rest & serve: Allow to rest 5 minutes before serving. Garnish with fresh thyme if desired.
